Watermelon, Arugula and Feta salad

Celebrate summer with summer salads.  Nothing screams freshness more than local produce and bursting bundles of leafy greens and pyramids of local produce.   Chop up stunning, bright veggies and fruits and create a salad masterpiece.

Summer salads can be nutritional powerhouses, quick to prepare and refreshing in the summer heat.  Include any variety of ingredients, healthy fats and take advantage of the abundance of freshness available in the summer months.

Add protein in a variety of ways like fresh tofu, shrimp, salmon, crab, beef or chicken can add to the variety and taste of summer salads.

Use your favorite chopping knife, a clean cutting board and the freshest ingredients.  Get to chopping!  Top off  your salad with the dressing of your choice  and you are done.  Serve your salad in a wonderful chilled bowl and serve.

Remember the abundance of zucchini, cucumbers, golden squash, new potatoes and baby tomatoes too.  Melons and peaches are among the variety of summer choices and there are literally hundreds of choices to make your salads crisp and juicy.  Juicy tomatoes can join forces with creamy avocadoes and sweet summer corn.  There is no limit to what your imagination can gather together in the summer when produce is so abundant.  Remember savory nuts and perfectly balance your salad with a touch of sweetness and add some fresh herbs.  Salads can go from the dreaded main dish to a family favorite with the chop of a knife.  Dig into a fresh, crisp summer salad and enjoy!

 

Watermelon and Feta Salad

 

Ingredients

2 Tablespoons Olive Oil

1 Tablespoon White Wine Vinegar

1-Tablespoon Fresh Lime Juice

Salt and Pepper

¼ Small Red Onion (slice thin)

1-pound Fresh Watermelon, cut in 2 inch pieces  (seedless)

½ Cup Cucumber, Chopped (seedless)

3 Cups Baby Arugula

¾ Cup Feta Cheese

 

Directions

Whisk together oil, Vinegar, lime juice and ¼ tablespoon each salt and pepper.  Add onions and let sit for 10 minutes to marinate.

Add watermelon, arugula and watermelon to the bowl of onions and gently toss to combine.  Top with feta cheese, serve and enjoy!
